With a Michelin star under his belt at the age of 25 – cajsh – he’s making the most of working with totally blank canvas at Tonic & Remedy which may well be the stuff of dreams but with that comes quadruple the work and he’s currently working his chef-shoe-clad socks off. He’s a big believer in getting out what you put in though and with being Gary Rhodes’ no. 2 and TV stormer Great British Menu on his CV he’s a great example of exactly that.
